Butter Moss Pudding
Ingredients
Moss Pudding:
- 1 clear gelatinous wrap
- 150 gr of sugar
- 125 gr of instant coconut milk
- 550 ml of water
- 100 ml of pandan juice from 10 pieces of pandan leaves blended and filtered
- 1 1/2 tsp of pandan essence (add to pandan juice)
- 2 eggs beaten off
- 1/4 tsp salt
- 1 1/2 tsp esen vanilla
Butter Pudding:
- 3 egg yolks
- 100 gr butter
- 1 tsp of vanilla essence
- 1/2 can of sweetened condensed milk (stir using whisk until smooth, set aside)
- 1 clear gelatinous wrap
- 4 tablespoons of sugar
- 550 cc of water
Instructions
Pandan Pudding:
- Mix all the ingredients of the pandan pudding, then strain so that they don't clot.
- Cook over medium heat until the moss appears on the surface of the pudding. A few tips if you want the size of the moss to look great, don't stir too often, and vice versa.
- If you already see the moss turn off the heat and pour it until it fills half the mold. Well, if you want the moss to be full, then wait for the dough to thicken first, then pour it into the mold. Or if you want the moss to only fill the bottom surface of the mold, then you can directly pour the pudding mixture while it's hot. Set it aside.
Butter Pudding:
- Cook a packet of clear gelatin, sugar and water until bubbly, turn off the heat.
- In a separate container mix egg yolks, butter, vanilla ice cream, and sweetened condensed milk.
- Next, take half the agar and pour it into the egg yolk mixture. Then, stir quickly using whisk and put the remaining mixture in order and cook until boiling.
- If it has boiled, slowly pour the butter pudding mixture over the surface of the moss pudding mixture. Store in the refrigerator until the pudding hardens and serve when it's cold to make it more fresh.
