Brioche Almond Chocolate Nutella
Ingredients
- 50 grams of sugar
- 6 egg yolks
- 50 grams of cornstarch
- 100 grams of powdered almonds
- 4 egg whites

- 150 grams of unsalted cold butter
- 1 egg yolk mix 1 tablespoon of thick cream, for spread
- 8 grams of instant yeast
- 50 grams of medium protein flour
- 200 grams of high protein flour
Filling:
- 50 grams of chocochips
- 75 grams of nutella
Instructions
- Mix flour, sugar, raginya, almonds, and milk until blended. And put the egg and liquid milk slightly until smooth.
- Then add butter and salt. And knead until elastic
- And let stand 60 minutes. Then deflate it.
- Continue to weigh 50 grams and 10 grams respectively. And round it up. And let stand 10 minutes. Continue to flatten and divide the dough to 50 grams. Then fill with nutella and chocochips. And round it up.
- Then apply a wide, short muffin pan with margarine, and sprinkle flour.
- Then place a large circle in the mold. And press the center with your fingers to concave.
- Continue placing a small circle in the basin. And let stand 30 minutes
- Then apply egg yolk. And oven with a lower flame temperature of 190 degrees Celsius 10 minutes until cooked.
