Banana Compote
Ingredients:
- 1 cooked banana (12 seeds)
- 1 ounce of kolang kaling (wash, cut 2 parts and soak again) can be replaced by another one
- 2 pieces of pandan leaves
- 200 grams of refined brown sugar
- 200 milliliters of thick coconut milk
- 400 clean water
- 1/2 tsp vanilla powder (optional because there are already pandan leaves)
- 1/2 tsp fine salt (must, flavor enhancer)
Instructions:
- Wash the banana that still has skin after it is peeled, then peel the clean kepok banana peel and cut it into pieces every 2 cm or according to taste and set aside.
- Boil the kolangkaling briefly / half-cooked. if you do not like kolangkaling can be replaced according to taste.
- Then mix the pieces of kolang kaling which has been drained with banana slices
- Prepare a large enough pan, add the coconut milk and boil using medium heat and stable, add water and brown sugar while stirring constantly so that the coconut milk does not break until boiling
- After the coconut milk boils, add the pandan leaves to have a more fragrant aroma
- If it's still not fragrant, add vanilla powder, don't forget to add the flavor enhancer, namely salt, stir until evenly distributed
- The final step is to enter the banana and kolang kaling into the coconut milk stew and wait for a while until it is cooked and tender
- Banana compote is ready to be served
